When Iām invited around to eat with the carnivores on a Sunday, either family or friends, Iāll make a red wine onion gravy. Amongst the ingredients loads of onions (of course), fresh chillis, garlic, herbs, Lea & Perrins, etc. whatever applicable is to hand: marmite, brown sauce, miso, mushrooms, cider vinegar, and three bay leaves. Iāve read different things about using alcohol in cooking that you can burn it off and ruin the flavour so to be safe Iāll keep topping it up every 15 minutes or so. A bottle of red minimum will be used. Half in the gravy and half Iāll drink during the preparation of. The most important ingredient is time (t i m e). Itās got to simmer and bubble away for at least 2 to 3 hours. Thatās when the magic happens. During the meal it usually begins with āCan I try a little of your veggie gravy? Just curiousā Soon Iām fighting off a table full of carnivores who all want some of my red wine ācrackā onion gravy. In the Isle of Man, we call it chips, cheese 'n gravy because we're not effete, and we use proper cheddar and not tasteless curds. And we pay our taxes.
