Well, other religions want conversions - extreme case, see Crusades.
Judaism doesn't exactly prohibit conversion but makes it incredibly difficult to do so.
Male convert would be Jewish. If his partner were non-Jewish, kids are non-Jewish - only far left and far right would consider them so.
If female convert has kids, then they would be considered Jewish. If those kids decided to practice say Islam instead, then they would be Jews practising Islam.
