Chuck some garlic and rosemary in with your boiling potatos. Boil for about 10- 15 min. Drain them but also toss them in the pan a bit. I do this by pouring them from colander to pan a few times. This fluffs them up so when cooked you get nice crispy bits. | |

Me? Parboil spuds for 5 mins. drain and shake them so they fluff at the edges. cocktail of goose fat and beef dripping heated to the max in the pan, chuck the spuds in, toss 'em around, into the oven on max heat and give 'em good toss every 15 mins or so. Total cooking time c.1hr, 20 mins. | |

Sunday roast thread. on 10:38 - Nov 27 with 1455 views | stuabd | You can do a cracking beef joint in a charcoal bbq. Light the charcoal in a bbq chimney and once they are lit tip them into the bbq. Arrange them so that you have charcoal on two sides but a gap the size of the joint in the middle. Basically you don't have charcoal under the place where the beef will be in the middle. It's indirect cooking. Once it's absolutely flying add the rib eye joint and put the lid on. Turn it over after 25 minutes and put the lid back on. Total cooking time is probably 50 depending on how you like your beef. The result is well worth it. | | | |

They're courgettes with aubergines, onions, red pepper and some meat thrown on for good measure, black udding, chorizos and surprisingly a cut of pork instead of the usual beef. It all went down very well as did the beer and wine... [Post edited 28 Nov 2016 2:36]
