Definitely start with season 1.
It had a season finale which was amazing and season 2 should start from there and my gut-feeling is that you'll miss a lot of the story development and the characters' profiles and interaction between them.
I found this an amazing TV show. Great acting, art and music too.
What I find odd is that most football players in South America now cut their hair in the same way as Tommy Shelby and his mates.
