Scrambled have to be slow cooked and soft, and not cooked to within an inch of their lives.

Wouldn't normally stan for omelettes, but I had a spider crab omelette at Mountain, on Beak Street, the other day that was by some distance the best eggs I have ever tasted. A proper chef doing an omelette is unbeatable.

For everyday purposes …
1/ Fried (crispy edges, runny yolk)
2/ Poached
3/ Hardboiled in egg mayo
4/ Scrambled
5/ Soft boiled
6/ Omelette

I do similar but put a slice of mature cheddar on the toast and stick the eggs on top - lahvly.

Fried in butter, slowly. Salted white and 'just' cooked with a runny yolk.

Scrambled in a pan, mixed vociferously and seasoned well, but still a little wet, on toast with the heat from the toast finishing the cooking.

Hard boiled need to be under with a moist yolk, wrapped in sausage meat and breadcrumbs and deep fried.

It's always noisiest at the shallow end

Came across a great video online from chef Jean Pierre who changed my scrambled eggs forever .
He lets them sit for 20 minutes after beating and adding salt and pepper .Then adds cold butter ,bubble water and cream ( I skip the cream never have it in fridge ).
He starts stirring them right away so they are delicious and fluffy .
Serves on toast with butter and cheese ,tiny onions and truffle oil (skip this too expensive )

MPW is an absolute genius. Could listen to his story telling all day. Makes cooking seem so simple but amazing at the same time. White Heat should be on the bookshelf of anyone who enjoys cooking.
