...watching 'Our Leaders' post match interview and I was struck by the grounds crew running lawn mowers over the surface of a just played on pitch. What's that all about, shouldn't it be rollers first, leave the grass for a day or two then?

First the ground staff replace any divots. Then they mow not to cut the grass as will already be the correct height but to suck up any loose debris into the mower. After that they repair, top dress, level etc.
