Can’t beat a good egg fried rice
Make sure cooked rice is cold before you start. Whip a few eggs together and fry gently and put aside when they’re just about cooked. Put rice and eggs aside while you stir fry all the left over crap from your fridge and/or exotic goodies from Wing Yip in Cricklewood (delete as appropriate)
Add the rice, heat it all up, stir the egg in with some MSG and soy sauce

Pickled eggs - used to be quite common on chip shop counters when I was a nipper. I think they make you fart profusely, well the ones at the chippy on Deansbrook Rd in Burnt Oak did. | |

I love poached eggs, neatly cooked (fresh eggs essential) with soft yolk. Bob Mortimer recommended cooking them in a microwave in a mug. I tried that, but it exploded, even after pricking the yolk and following various recipes. Scrambled eggs done in a microwave aren't too bad, less messy as well. |  | | |

Anyway but scrambled, when I was 8 ( 1975) I went into hospital to have my tonsils out, back then you were kept in for a few days, I had a problem with scrambled eggs due to their texture, the matron on my last day said if I didn’t eat them I wouldn’t be allowed home, had to force myself and ended up being sick causing my stitches to come out, just looking at them these days makes me dry uncomfortable. |  |

Ugh, poor you, being forced to eat something you don't like is bad enough at any time, let alone when you are recovering from an operation.
This thread has just reminded me of a simple, egg-based dish I dreamt up when I was a student:
- Boil some wholemeal rice
- Add the cooked rice to a pan containing some onions you have just fried
- Blend in the yolks of a couple of eggs and add some grated cheese and paprika
- Warm through while stirring the mixture gently
- Serve with salad and crusty bed.
Cheap and tasty, even if it looks a bit dubious. |  |

As a 19 year old I took a two day bus journey, over what was the second highest mountain road in the world, between Manali and Leh in the Ladakh of northern India. In the morning of the second day we were in what was basically a large tent, with a guy with two hot rings offering breakfast. Fried eggs and some other things were on the menu, which was a just chalk on a board. We wanted scrambled eggs. He had no idea what that was, but he was happy to let us show him how to make them. We made them for us, and for him, and he was very happy with what we produced. I remember we had a little cayenne pepper or paprika to sprinkle on top.
