Nah,King Edwards every time.Boil them for five minutes,let the steam flash off,shake the saucepan quite vigorously.Have a combination of beef dripping,clarified butter and some sunflower oil heating top shelf of the oven in a roasting pan at gas mk.7.When smoking a bit bung in the spuds and slosh them around in the oil,sprinkle with sea salt and return them to top shelf for an hour. Your mouth will love you for the rest of your life. | |

While they're cooking heat the duck fat in a tray. Drain the potatoes and add a couple of tea spoons of baking powder. Shake potatoes well to fluff the edges. Season again and into the oven and cook on high for 30. Check near that time and turn once. Make sure they're browned all over and drain on kitchen paper before serving. Par boil for around 10-15 minutes making sure the water was salted. Drain in a metal collander and shake and fluff up. Let the potatoes dry off. In the meantime Fry Crisp and Dry in the pan with some salt in it. Oven at 230 and make sure the oil is very hot before adding the potatoes. Once added baste. Return to the oven for 10 minutes and this is where I add the parsnips at which I turn the potatoes. Cook for a further 25-30 minutes. Once cooked place spuds on a kitchen towel and towel off the excess oil. You will have the crispiest of roast potatoes. But you’ll still support a shîte football team. 😂 [Post edited 28 Jan 2023 20:52]

Totally agree… a few Chrimbles ago I put the spuds on to do the pre-boil thing and completely forgot about them… then shat myself when I finally remembered!!! They were probably about 2 minutes from total disaster. Once dry I had to really, really carefully place them in the now super hot goose fat… Result was the best roast spuds I have ever done. | | | |

Using olive oil definitely means you need to fluff more as it soaks into the spuds - butter works just as well in my experience. | | | |

Maris Pipers definitely the best. Put a roasting tray with a generous amount of fat/oil in it on the highest shelf of the oven while it pre-heats. Thinly peel the potatoes cutting large ones in half, and put them in a steamer fitted over a large pan of boiling water. Sprinkle salt all over them, put a lid on, turn the heat down to low and steam for around 10 mins until the outer edges are fluffy. Then drain off the water. Place the lid back on the saucepan, and, thinking your worst thoughts on the latest defeat, shake the saucepan as hard as you can then turn the pan upside down and give it another shake - this of course is the secret of the crunchy edges. Then transfer to the direct heat (medium) on the hob and lower the potatoes into the hot fat. When they are all in, turn each one over a couple of times so it's completely coated with fat, and place them back on the highest shelf of the oven and leave them for 50 minutes to 1 hour, or until they are golden brown. Personally, I like a lot of chopped rosemary and garlic so I add them before cooking, and I always add a dash of white wine for luck. | | | |
