This article names a few, if it’s accurate all told there appear to be about 9 countries who only trade on WTO with no trade deals. Monaco is prosperous, DT of the others are the complete opposite and very poor or corrupt countries.

You could easily take a generation or two to agree a trade deal, possibly never. If we have worst case scenario of WTO rules we could temporarily be stuck with it infinitely.

Perhaps, but then nothing focuses the mind and attention like a looming and final deadline. Remember back to those halcyon days where you’ve got to hand an assignment in to your tutor by Tuesday or you’ll fail the course. You got it done in time.
