Cooked for 3 and a half hours, well over a pint of fat has come off it. The roast spuds are in as I speak. Cabbage, roast parsnips and carrots to accompany them.

As long as it's cooked on a rack and the fat is allowed to drain off it's okay.

There's not a hell of a lot of meat with a goose, a fairly large one feeds 4 people with a reasonable appetite.

Never found it greasy. If you cook it for the right amount of time, it's no more greasy than duck or chicken. You should pierce the breast a few times and collect the grease so it all runs out, and as someone else said, collect the grease and use it for roasties which are superb as a result.
